Maui Pineapple Lemon Gelatin Salad

- 6 ounce package lemon gelatin shopping list
- 20 ounce can crushed pineapple well drained reserving liquid shopping list
- 2/3 cup whipped heavy cream shopping list
- 1/3 cup mayonnaise shopping list
- 1 cup loosely packed shredded cheddar cheese shopping list
How to make it
- Place gelatin in a large bowl.
- In two cup measuring cup add 1/2 cup pineapple juice and 1 cup water.
- Heat to very hot then add heated mixture to gelatin and stir until gelatin is dissolved.
- Add 1-1/2 cups ice water and stir in well drained pineapple.
- Pour gelatin mixture into rectangular glass container lightly sprayed with cooking spray.
- Place in refrigerator until firm.
- Mix whipped cream with mayonnaise and blend well.
- Just before serving spread cream mixture over gelatin and sprinkle with cheese. Refrigerate until served.
