Macaroni Tuna Salad Recipe
MACARONI TUNA SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pollard Estate in Mesquite, Texas in 1997.

Ingredients
  • 12 ounces canned water packed albacore tuna drained and flaked
  • 8 ounce package small shell macaroni
  • 2 hard boiled eggs finely chopped
  • 1/4 cup green or red pepper chopped
  • 2 stalks celery chopped
  • 1 bunch green onions chopped
  • 1 cup frozen green peas cooked and cooled
  • 3/4 cup mayonnaise
  • 2 tablespoons pickle relish
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Cook macaroni according to package directions then drain and rinse with cold water. Allow to cool then add tuna, eggs, pepper, celery, onions and peas and mix well.
  2. In a small bowl mix together mayonnaise, pickle relish, salt and pepper.
  3. Add to the macaroni and mix well then place in refrigerator several hours before serving.
