Mouth Watering Harvest Salad

- 1/2 cup raisins shopping list
- boiling water as needed shopping list
- 1 cup halved large seedless grapes shopping list
- 1 tablespoon diced dried apricots shopping list
- 1-1/2 tablespoons fresh rosemary shopping list
- 1/4 large red onion cut small slivers shopping list
- juice of 1 fresh lemon shopping list
- 5 tablespoons extra virgin olive oil shopping list
- 1 teaspoon salt shopping list
- 2 teaspoons freshly ground black pepper shopping list
- 5 cups romaine chopped shopping list
- 2 cups baby spinach shopping list
- 1 tablespoon pine nuts toasted shopping list
How to make it
- Put raisins in small bowl and pour boiling water over them to cover.
- Let stand until plump and soft about 10 minutes then drain.
- Put raisins, grapes, apricots, rosemary and onion in a large bowl.
- Add lemon juice and stir in the olive oil then season with salt and pepper.
- Tear romaine and spinach into bite size pieces and put in large bowl.
- Add dried fruit mixture and mix well then scatter pine nuts over top.
