How to make it

  • Put raisins in small bowl and pour boiling water over them to cover.
  • Let stand until plump and soft about 10 minutes then drain.
  • Put raisins, grapes, apricots, rosemary and onion in a large bowl.
  • Add lemon juice and stir in the olive oil then season with salt and pepper.
  • Tear romaine and spinach into bite size pieces and put in large bowl.
  • Add dried fruit mixture and mix well then scatter pine nuts over top.
