Almond Tossed Chicken and Clementine Salad

- 2 cups baby spinach, raw washed & dried shopping list
- 2 clementine oranges, peeled and separated into individual segments shopping list
- 6 oz cooked chicken meat ( I had 2 chicken legs in the fridge) shopping list
- 1/2 cup sweet onion, very thinly sliced shopping list
- 2 tbsp almond Accents, Sunkist Original Oven roasted shopping list
- 1 tbsp orange marmalade shopping list
- 1/4 cup orange juice shopping list
- 1 tbsp canola oil shopping list
- 1 tbsp rice vinegar or white wine vinegar shopping list
- 1 tbsp hot Chinese mustard or Dijon-style mustard shopping list
- 1/2 tsp tarragon shopping list
- 1/2 tsp mint shopping list
- 1/4 tsp salt shopping list
- 1/8 tsp pepper shopping list
How to make it
- 1. Combine salad greens, orange segments, chicken and almonds in large salad bowl. Toss gently but well.
- 2. Combine orange marmalade, orange juice, canola oil, vinegar, mustard, onions, tarragon, mint, salt and pepper in a small bowl. Stir well to mix.
- 3. Pour over salad just before serving; toss gently but well.
- Yield: 2 servings
