PAVLOVA - A Kiwi Favourite

- 4 egg whites shopping list
- 1 cup caster sugar (fine sugar) shopping list
- 1/2 tsp vanilla extract shopping list
- 3/4 tsp white vinegar shopping list
How to make it
- Beat egg whites until firm peaks form.
- Gradually add the sugar, beating well after each addition
- Continue to beat until the sugar is dissolved
- Add vanilla and vinegar and beat for 1 minute only
- Line a baking tray with baking paper or greased greaseproof paper
- Spoon the mixture onto the tray and spread it out into a circle shape (about 7" diameter)
- Smooth the top.
- Bake at 120oC (250oF) for approx 1 1/2 hours
- Turn off the heat and leave the pavlova to cool completely in the oven (this stops it sweating)
- When cool, top with whipped cream and your choice of garnish e.g. sliced fresh frut, chocolate chips, whatever.
