PAVLOVA - A Kiwi Favourite Recipe
This is a Kiwi icon and a favourite at most get togethers. It has a crunchy meringue crust and a soft "mashmallow-like" centre.

Ingredients
  • 4 egg whites
  • 1 cup caster sugar (fine sugar)
  • 1/2 tsp vanilla extract
  • 3/4 tsp white vinegar

Directions
  1. Beat egg whites until firm peaks form.
  2. Gradually add the sugar, beating well after each addition
  3. Continue to beat until the sugar is dissolved
  4. Add vanilla and vinegar and beat for 1 minute only
  5. Line a baking tray with baking paper or greased greaseproof paper
  6. Spoon the mixture onto the tray and spread it out into a circle shape (about 7" diameter)
  7. Smooth the top.
  8. Bake at 120oC (250oF) for approx 1 1/2 hours
  9. Turn off the heat and leave the pavlova to cool completely in the oven (this stops it sweating)
  10. When cool, top with whipped cream and your choice of garnish e.g. sliced fresh frut, chocolate chips, whatever.
