How to make it

  • Beat egg whites until firm peaks form.
  • Gradually add the sugar, beating well after each addition
  • Continue to beat until the sugar is dissolved
  • Add vanilla and vinegar and beat for 1 minute only
  • Line a baking tray with baking paper or greased greaseproof paper
  • Spoon the mixture onto the tray and spread it out into a circle shape (about 7" diameter)
  • Smooth the top.
  • Bake at 120oC (250oF) for approx 1 1/2 hours
  • Turn off the heat and leave the pavlova to cool completely in the oven (this stops it sweating)
  • When cool, top with whipped cream and your choice of garnish e.g. sliced fresh frut, chocolate chips, whatever.
