Tutti Frutti Bran Muffins

- 1, 16 oz box of Raisin Bran cereal or cinnamon cluster raisin bran shopping list
- 5 cups flour- white whole wheat for healthier shopping list
- 2 cups sugar or Splenda for sugar free shopping list
- 5 tsp baking soda shopping list
- 4 eggs or egg substitute shopping list
- 1 cup oil- I use light olive shopping list
- 4 cups buttermilk, I use low fat shopping list
- 15 oz pkg mixed berries, thaw if frozen- not in juice shopping list
- or 2 cups fresh berries ( raspberries or blueberries etc. or mixed ) shopping list
How to make it
- Heat oven to 350F
- In one "large" bowl mix in dry ingredients
- In another whisk liquid ingredients together
- Blend both mixtures together.
- Fill muffin tins 3/4 full
- Bake about 25 minutes or golden and firm
- Cool on rack
- May freeze these.
- I make 3 dozen at once but batter can remain in covered bowl in refrigerator for a few weeks.
- Stir in fruit just before baking
