here's a tasty light, healthy meal

Ingredients
  • grilled eggplant slices
  • fresh mint - roughly chopped
  • feta cheese - crumbled
  • whole wheat cous cous
  • olive oil
  • balsamic vinegar ( optional)

Directions
  1. Prepare cous cous according to package directions adding 1 tbsp oil to cooking water..
  2. Mound cous cous on plate.
  3. Top with eggplant slices, feta and mint.
  4. Serve.
  5. * can be drizzled with some balsamic vinegar if so desired.
