Tandoori Chicken Skewers Recipe
This recipe comes from my catering partner who is an incredible cook. He came up with this recipe when he was asked to cater a bachelor's skewer party. It's very tasty and gets great reviews.

Ingredients
  • 4 boneless skinless chicken breasts
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons tandoori paste
  • 3 tablespoons plain yogurt
  • 1 garlic clove crushed
  • 1 tablespoon chopped cilantro
  • 1 small white onion cut into wedges and separated into layers
  • 1 tablespoon oil for brushing
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Cilantro sprigs for garnish

Directions
  1. Chop chicken breasts into cubes.
  2. Put in a bowl then add lemon juice, tandoori paste, yogurt, garlic, cilantro and seasoning.
  3. Cover and let marinate in the refrigerator 3 hours.
  4. Preheat broiler to high then thread alternate pieces of chicken and onion onto four skewers.
  5. Brush onions with a little oil then lay skewers on broiler rack and cook 12 minutes turning once.
  6. Garnish kebabs with cilantro and serve at once with rice pilaf.
