BOK CHOY SOUP WITH CRAB This recipe came from an estate sale. I obtained it when I purchased the family collection from the Crenshaw Estate in Grand Prairie, Texas in 1994.

Ingredients
  • 2 teaspoons cooking oil
  • 2 slices ginger lightly crushed
  • 1 walnut size shallot finely chopped
  • 4 ounces cooked crabmeat flaked
  • 1 quart chicken stock
  • 1 cup cold water
  • 2 teaspoons soy sauce
  • 8 ounces bok choy thinly sliced
  • 1 carrot, sliced
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon white pepper

Directions
  1. Place pot over high heat until hot then add oil swirling to coat sides.
  2. Add ginger and shallot and cook stirring until fragrant about 10 seconds.
  3. Add crabmeat then stir-fry 1 minute.
  4. Add stock, water and soy sauce then bring to a boil.
  5. Add bok choy and carrot then reduce heat to low and simmer until vegetables are tender.
  6. Stir in sesame oil and pepper.
