Filled Armenian Cookies Recipe
FILLED ARMENIAN COOKIES This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Clinton Estate in Mesquite, Texas in 1988.

Ingredients
  • 5-1/2 cups flour
  • 3 eggs beaten
  • 1-1/2 cups granulated sugar
  • 1/2 cup whole milk
  • 1/2 teaspoon baking soda
  • 1-1/2 cups unsalted butter
  • Filling:
  • 2 cups finely ground walnuts
  • 2 egg whites beaten
  • 1 tablespoon granulated sugar
  • 1/8 teaspoon cinnamon

Directions
  1. Combine filling ingredients in order presented.
  2. Beat eggs well and add to melted butter.
  3. Dissolve sugar into milk and add to eggs and butter.
  4. Mix flour and baking soda together and slowly add to above mixture to form soft dough.
  5. Roll out about 1/4" thick and cut into 2-1/2” diameter circles.
  6. Place a teaspoon full of the filling onto the circle then fold over and seal sides together.
  7. Bake cookies at 350 for 20 minutes.
