Quick, easy and wonderful for a summer luncheon.

Ingredients
  • 2 (10 ounce) cans condensed chicken broth (Campbell's)
  • 2 (10 ounce) cans cream of potato soup
  • 16 ounces sour cream
  • 1 tablespoon sweet onion, minced
  • fresh chives or parsley, chopped, for garnish

Directions
  1. Whisk together chicken broth, soup, sour cream and onion.
  2. Cover and chill several hours or overnight.
  3. Ladle into bowls and garnish with chives or parsley.
