Ingredients
  • 24 pickled jalapeno peppers (think I'll try fresh ones)
  • 1 pound cheddar cheese
  • 1/2 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 2 large eggs
  • 4 cups corn oil for frying

Directions
  1. Cut a short slit in each pepper.
  2. Remove as many seeds as possible.
  3. Slice Cheddar cheese into 1/4"x1" strips.
  4. Stuff each pepper with a Cheddar strip.
  5. Break eggs into a small bowl.
  6. Beat eggs.
  7. Combine cornmeal, flour and salt on a platter (or a paper towel)
  8. Dip peppers into the egg.
  9. Roll in cornmeal mixture until well coated.
  10. Arrange peppers on a metal rack and allow them to sit for 30 minutes.
  11. Heat oil in deep-fryer to 375 degrees F.
  12. Using a slotted spoon, lower peppers into hot oil (in small batches).
  13. Fry until crisp and golden, about 4 minutes.
  14. Drain on paper toweling.
