Mexican Chicken Lasagna

- 12 corn tortillas shopping list
- 4 ounces marinara sauce shopping list
- 8 ounces canned corn shopping list
- 14 ounces black beans cooked shopping list
- 14 ounces pepper jack cheese plus more for topping shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 16 ounces chicken cubed shopping list
How to make it
- Preheat oven to 350.
- Prepare tortillas by soaking them in hot water until they are slightly soft.
- Coat bottom of a rectangular pan with 1/2 of the marinara sauce.
- Spread 4 tortillas down on top of the sauce in the pan.
- Top the tortillas with 1/3 of the corn, beans and cheese then sprinkle with salt and pepper.
- Add 1/3 of the chicken then place 4 more tortilla on top and repeat with remaining toppings.
- Place in oven and bake 20 minutes
