How to make it

  • In a small bowl combine vinegar, shallot and a generous pinch of salt and let stand for 30 minutes then whisk in the olive oil and season with salt and pepper.
  • Preheat oven to 425.
  • Brush the baguette slices on both sides with 1 tablespoon of the olive oil.
  • Arrange on a baking sheet and bake 8 minutes then set aside to cool.
  • Reduce oven temperature to 350.
  • Lightly oil a small baking dish and put the goat cheese in it then sprinkle with thyme and drizzle with remaining olive oil then bake for 10 minutes.
  • Meanwhile in a bowl toss the salad greens with the vinaigrette.
  • Divide the greens among individual salad plates.
  • Spread the warm cheese on the toasts dividing evenly.
  • Arrange 3 toasts on each plate and serve the salads immediately.
