Farmers Market Greens With Baked Goat Cheese Toasts

- 1 tablespoon champagne vinegar shopping list
- 2 tablespoons finely-minced shallot shopping list
- 1/2 teaspoon fine sea salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 3 tablespoons extra virgin olive oil shopping list
- 12 thin diagonally cut baguette slices shopping list
- 1-1/2 tablespoons extra virgin olive oil shopping list
- 1/4 pound fresh goat cheese at room temperature shopping list
- 1 teaspoon coarsely-chopped fresh thyme shopping list
- 6 ounces mixed baby salad greens shopping list
How to make it
- In a small bowl combine vinegar, shallot and a generous pinch of salt and let stand for 30 minutes then whisk in the olive oil and season with salt and pepper.
- Preheat oven to 425.
- Brush the baguette slices on both sides with 1 tablespoon of the olive oil.
- Arrange on a baking sheet and bake 8 minutes then set aside to cool.
- Reduce oven temperature to 350.
- Lightly oil a small baking dish and put the goat cheese in it then sprinkle with thyme and drizzle with remaining olive oil then bake for 10 minutes.
- Meanwhile in a bowl toss the salad greens with the vinaigrette.
- Divide the greens among individual salad plates.
- Spread the warm cheese on the toasts dividing evenly.
- Arrange 3 toasts on each plate and serve the salads immediately.
