Molokhia - Vegetarian

- Molokhia - 500grams (I use the frozen packets shopping list
- vegetable stock (I use a chicken/beef stock that is actually vegetarian) shopping list
- 1 large onion shopping list
- 6 cloves of garlic (more if you like garlic :) ) shopping list
- 200 grams dried shitake mushrooms shopping list
- salt shopping list
- pepper shopping list
How to make it
- Boil rice
- Cut & fry onion until brown
- Cut and add garlic about halfway through Onion cooking
- In a saucepan - Boil 5 - 6 cups of water and add 3 tablespoons of stock powder, stirring in
- Add shitake mushrooms
- Add onion & garlic
- Salt and pepper to taste (It needs ALOT of salt)
- Turn off water and place frozen molokhia into saucepan
- Once it's melted, bring it to a boil again and then simmer for 15 min
- The cooking brings out the slimy nature of the molokhia
- Serve liberally over boiled rice

I love molokhia, but since becoming a vegetarian I really missed it and so did the kids! This is almost the same, its the spices that give it flavour and the mushroom gives it body. The family can have chicken with it too! Thank you
