- 1 4-serving size package regular (not instant!) vanilla pudding mix shopping list
- 1 cup packed browned sugar shopping list
- 1/2 cups sugar shopping list
- 1 5 ounce can evaporated milk shopping list
- 1 t vanilla shopping list
- 2 scant cups coarsely chopped pecans shopping list
How to make it
- Step 1: Combine pudding mix, brown sugar, and sugar in a medium saucepan. Stir in evaporated milk. Bring mixture to a full boil, stirring constantly. Boil for 7-8 minutes, stirring occasionally.
- Step 2: Remove saucepan from heat; stir in vanilla. Beat three minutes; do not over beat. (mixture should be shiny when dropped.) Stir in pecans.
- Step 3: Drop by tablespoon onto waxed paper. Let stand at room temperature 1 hour to harden. Makes 24.
- If you use a 6-serving pkg of pudding mix, increase all ingredients by 50%; make up the difference in evaporated milk with heavy cream if evap milk not available, increase boiling time to 8-9 minutes
