Pronto Pralines Recipe
This is a quick, easy praline recipe that produces candy very like what you find in New Orleans.

Ingredients
  • 1 4-serving size package regular (not instant!) vanilla pudding mix
  • 1 cup packed browned sugar
  • 1/2 cups sugar
  • 1 5 ounce can evaporated milk
  • 1 t vanilla
  • 2 scant cups coarsely chopped pecans

Directions
  1. Step 1: Combine pudding mix, brown sugar, and sugar in a medium saucepan. Stir in evaporated milk. Bring mixture to a full boil, stirring constantly. Boil for 7-8 minutes, stirring occasionally.
  2. Step 2: Remove saucepan from heat; stir in vanilla. Beat three minutes; do not over beat. (mixture should be shiny when dropped.) Stir in pecans.
  3. Step 3: Drop by tablespoon onto waxed paper. Let stand at room temperature 1 hour to harden. Makes 24.
  4. If you use a 6-serving pkg of pudding mix, increase all ingredients by 50%; make up the difference in evaporated milk with heavy cream if evap milk not available, increase boiling time to 8-9 minutes
