Ingredients
  • Vegetable oil
  • 16oz frozen french fries, or 3 potatoes, rinced, sliced and fried until golden, or substitute with any other starch group such as leftover rice, leftover mac and cheese, etc.
  • chopped up bologna, venison sausage, leftover ribs, or leftover roast beef.
  • 1/2 of a 16oz bag of mixed frozen vegetables, or substitute with a can of corn, drained, or any other suitable vegetable group item.
  • 6 whole sport peppers, or chop up a jalepeno
  • 8 oz meltable cheese such as montery jack, sharp cheddar, velveeta, cottage cheese to use up, etc.
  • 2 eggs
  • louisiana or valentina brand red pepper sauce

Directions
  1. Over medium high heat in a 10 1/2" cast iron skillet cook the potatoes until golden and tender. add chopped up meat, vegies, and peppers and cook through until browned. throw in pieces of cheese, crack two or three eggs over the top. scramble up the grub until the eggs are cooked and cheese slightly melted.
  2. serve with red pepper sauce as a condiment.
