Low-Cal Chicken Enchiladas

- Ingredients8 oz fat free cream cheese shopping list
- 12 oz chunk chicken shopping list
- 1 tsp cumin shopping list
- 1/2 c black olives, sliced shopping list
- 3/4 c tomatoes, chopped shopping list
- 1 c salsa shopping list
- 1/4 c cheddar cheese, finely shredded shopping list
- 3 flour tortillas shopping list
How to make it
- Mix cumin and cream cheese till smooth. Add chicken, 1/4 c olives, 1/4 c tomatoes, and 1/4 c salsa.
- Distribute mixture equally onto tortillas, and roll.
- Place into a lightly greased baking dish. (PAM cooking spray is great)
- Top with remaining salsa, olives and tomatoes. Sprinkle cheese on top.
- Bake at 350 for 30 minute and serve.
