ROCKING AMISH CRACKER JACKS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Watson Estate in Greenville, Texas in 1987.

Ingredients
  • 3 quarts popped corn
  • 1 cup light brown sugar
  • 1/2 cup unsalted butter
  • 1/4 cup corn syrup
  • 1/2 teaspoon salt
  • 1/8 teaspoon cream of tartar

Directions
  1. Combine all ingredients except corn in heavy duty sauce pan.
  2. Heat over medium heat until mixture reaches 260 degrees or hard ball stage.
  3. Boil slowly then pour over popped corn then put in 200 degree oven for 1 hour.
  4. Stir 3 times during cooking then allow cooling completely.
