Ingredients
  • 1/2 lb. lentils, washed
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 onion, chopped
  • 2 cloves garlic, peeled
  • water, as needed 4 Tbsp. oil
  • salt and pepper
  • chopped parsley
  • 1 bay leaf
  • oregano to taste

Directions
  1. Simmer onions and garlic in oil.
  2. Add all of the remaining ingredients, cover with water, and simmer for 1 1/2 to 2 hours or until lentils are tender.
  3. When serving the soup, a tablespoon of vinegar may be added to each bowl for extra flavor.
