SPAGHETTI WITH MEAT SAUCE DATED 1951 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Smith Estate in Mesquite, Texas in 1991.

Ingredients
  • 1 large white onion chopped
  • 1 green pepper chopped
  • 1/2 cup sliced mushrooms
  • 1 teaspoon olive oil
  • 1 teaspoon minced garlic
  • 14 ounces crushed tomatoes
  • 6 ounces tomato paste
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon hot red pepper flakes
  • 1/2 cup dries red wine
  • 1/2 cup water
  • 8 ounces spaghetti
  • 8 ounces lean ground beef
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 cup grated parmesan cheese

Directions
  1. Cook spaghetti per directions on box then drain well.
  2. Brown ground beef breaking it up as it cooks then drain off fat.
  3. Sauté onion, peppers, mushrooms and garlic in olive oil until soft.
  4. Reduce heat and stir in tomatoes, tomato paste, basil, oregano, hot pepper flakes, wine and water.
  5. Simmer until thick then stir in beef and heat through and serve over spaghetti with cheese.
