Southern Bean Soup Dated 1963

- 1 cup dried beans shopping list
- Cold water shopping list
- 6 cups ham broth shopping list
- 1 cup chopped celery shopping list
- 1/2 onion minced shopping list
- 3 tablespoons of butter shopping list
- 3 tablespoons flour shopping list
- salt and pepper shopping list
How to make it
- Cover beans with cold water and let stand overnight.
- Drain off water and add beans to ham broth.
- Add celery and onion and let cook slowly until beans become quite soft.
- Strain bean broth then press beans through a sieve and add pulp to strained broth.
- Melt butter and stir in flour, salt and pepper.
- Slowly stir in the hot bean broth and simmer until thickened.
