Speedy Tomato Chick Pea Soup Recipe
SPEEDY TOMATO CHICK PEA SPINACH SOUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Thomas Estate in Kaufman, Texas in 1991.

Ingredients
  • 2 cups vegetable stock
  • 28 ounce can tomatoes
  • 1 white onion chopped
  • 1 clove-garlic minced
  • 1/4 teaspoon dried sage
  • 1 cup swirl pasta
  • 19 ounce can chickpeas drained and rinsed
  • 2 cups chopped fresh spinach
  • 1 teaspoon pepper
  • 1 drop hot pepper sauce

Directions
  1. In large saucepan combine stock and tomatoes breaking up with fork.
  2. Add onion, garlic and sage then bring to a boil and add pasta.
  3. Reduce heat to medium low then cover and simmer 7 minutes.
  4. Add chickpeas and spinach then cover and cook three minutes.
  5. Stir in pepper and hot pepper then serve immediately.
