Southwest Ribs Dated 1972 Recipe
SOUTHWEST RIBS DATED 1972 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Zormes Estate in Lancaster, Texas in 2001.

Ingredients
  • 1/2 cup white onion chopped
  • 2 teaspoons vegetable oil
  • 1 teaspoon ground red chilies
  • 6 juniper berries dried and crushed
  • 3 cloves garlic finely chopped
  • 1/2 teaspoon salt
  • 1/2 ounce baking chocolate grated
  • 1 cup water
  • 2 teaspoons cider vinegar
  • 6 ounces tomato paste
  • 2 teaspoons sugar
  • 3 pounds pork back ribs
  • Cook and stir onion in oil in 2 quart saucepan for 2 minutes.

Directions
  1. Stir in ground red chilies, juniper berries, garlic and salt.
  2. Cover and cook 5 minutes stirring occasionally then stir in chocolate until melted.
  3. Pour water, vinegar and tomato paste into blender container.
  4. Add onion mixture and sugar then cover and process until well blended.
  5. Heat oven to 375 then cut between pork back ribs to separate.
  6. Place in a single layer in roasting pan and pour sauce evenly over pork.
  7. Bake uncovered 30 minutes then turn pork and bake 30 minutes longer.
