How to make it

  • Combine pork, thyme, sage, parsley, salt and white pepper.
  • Divide mixture into 18 balls then flatten into patties about 1/2" thick.
  • In large skillet heat oil over moderate heat until hot but not smoking.
  • Fry patties 5 minutes on each side.
  • Drain well and transfer to a serving platter and garnish with sage.
