Sausage Patties With Fresh Herbs Recipe
SAUSAGE PATTIES WITH FRESH HERBS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Oliver Estate in Fort Worth, Texas in 1997.

Ingredients
  • 1-1/4 pound ground lean pork
  • 1-1/2 tablespoons minced fresh thyme
  • 1 tablespoon minced fresh sage
  • 1/2 cup minced fresh parsley leaves
  • 2 teaspoons salt
  • 1 teaspoon white pepper
  • 2 tablespoons vegetable oil

Directions
  1. Combine pork, thyme, sage, parsley, salt and white pepper.
  2. Divide mixture into 18 balls then flatten into patties about 1/2" thick.
  3. In large skillet heat oil over moderate heat until hot but not smoking.
  4. Fry patties 5 minutes on each side.
  5. Drain well and transfer to a serving platter and garnish with sage.
