Irish Spiced Beef

- Ingredients shopping list
- 1 ts ground cloves shopping list
- 1 ts freshly ground black pepper (or white) shopping list
- 1 ts ground allspice (meat not cake) shopping list
- 1 ts ground mace shopping list
- 1 ts saltpeitre (Curing Salt will do, most butchers will give it for free) shopping list
- 1 tb brown sugar shopping list
- 1-2 kg round roast of beef (I used Briskett as a test, top side for round 2) shopping list
- I tall can Guinness (I added 2) shopping list
- water – enough to cover the joint shopping list
How to make it

- Method:
- Place beef in a bowl and rub in the Salt peter.
- Allow to cure for 24-48 hours.
- After the meat is cured drain, clean and dry the bowl.
- Do not wash the meat.
- Thoroughly mix dry ingredients.
- coat on all sides with spice mixture.
- Cover with plasticwrap and refrigerate for 7 days, rubbing spice mixture into meat once
- or twice every day.
- Put meat in pot. Add Guinness and water to cover.
- Cover pan; simmer about 3 hours till tender but not falling apart.
- Remove from heat, uncover, and let cool in stock.
- Lift meat from liquid; wrap in plastic or foil.
- Set on platter, with weight on top of meat.
- Refrigerate overnight, until very cold. Slice very thinly.
