How to make it
- Dip the tomato slices in the cornmeal mixed with the salt, pepper and flour.
- Heat the bacon drippings, oil, or shortening in a heavy skillet and saute the slices in it quickly until browned on both sides.
- Remove to a plate with paper towel to remove extra drippings then serve immediately.
