SOUTHERN FRANK DINNER WITH CORNBREAD TOPPING DATED 1966 This recipe came from an estate sale. I obtained it when I purchased the family collection from the DeYoung Estate in Tulsa, Oklahoma in 1982.

Ingredients
  • 1 medium white onion chopped
  • 1 medium bell pepper chopped
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 cans diced tomatoes
  • 1 pound beef hot dogs sliced
  • Topping:
  • 1/2 cup all purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cup yellow cornmeal
  • 2 tablespoons shortening
  • 1 egg
  • 2/3 cup milk

Directions
  1. Preheat oven to 425 then sauté onion and bell pepper in butter until golden.
  2. Turn off heat and add salt, pepper, tomatoes and hot dogs.
  3. Pour into greased baking dish then spoon topping on top in evenly spaced dollops.
  4. Bake 30 minutes.
  5. To make topping sift flour, salt, baking powder and soda then stir in cornmeal.
  6. Cut in shortening then add egg and milk.
