This is an adaptation on a recipe I found in a friend's cookbook.

Ingredients
  • 1 lb. ground turkey
  • 1 lb. ground pork
  • 1 onion, diced
  • 1 small can tomato sauce
  • 1 can diced tomatoes
  • 1 can Rotel with green chilis
  • 2 cups grated cheddar cheese
  • 8 corn tortillas
  • 1 can black olives

Directions
  1. Brown ground turkey and pork together. Add onion at end of browning til it is translucent.
  2. Coat 9x13 inch baking pan with olive oil.
  3. Place 4 corn tortillas on bottom of pan.
  4. Add 1/3 of meat sauce, 1/3 olives and 1/3 cheese
  5. Repeat layers.
  6. Bake at 350 degrees for 30-35 minutes.
