Italian Pasta And Bean Soup Recipe
Italian Pasta and Bean Soup This recipe came from an estate sale. I obtained it when I purchased the family collection from the Brooks Estate in Dallas, Texas in 1988.

Ingredients
  • 1 pound elbow macaroni
  • 30 ounces tomato sauce
  • 1 can chicken broth
  • 1 can navy beans
  • 1 teaspoon extra virgin olive oil
  • 2 cloves crushed garlic
  • 1/8 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/8 teaspoon crushed red pepper

Directions
  1. Sauté garlic and oregano in olive oil over medium heat for 30 seconds but do not brown.
  2. Add tomato sauce, broth, beans, salt and pepper them simmer 10 minutes.
  3. Cook pasta according to package directions then drain pasta and return to pot.
  4. Add tomato bean mixture then serve.
