Sausage And Corn Over Caribbean Rice Recipe
SAUSAGE AND CORN OVER CARIBBEAN RICE This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Wasters Estate in Van, Texas in 1992.

Ingredients
  • 2 tablespoons corn oil
  • 1 medium white onion chopped
  • 2 ham bouillon cubes crumbled
  • 3 cups water
  • 1 envelope Sazon with coriander, annatto, garlic and onion
  • 1-1/2 cups rice
  • 1 can whole kernel corn with peppers drained
  • 1 pound sausage sliced

Directions
  1. Heat oil over medium high heat and cook onion stirring occasionally until tender.
  2. Stir in bouillon blended with water and Sazon then bring to a boil over high heat.
  3. Stir in rice then reduce heat to low and simmer covered for 10 minutes.
  4. Stir in corn and sausage then simmer covered for 10 minutes then let stand 5 minutes.
