BATON ROUGE SPIRITED PORK CHOP CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Dasher Estate in Arlington, Texas in 2007.

Ingredients
  • 6 large center cut pork chops
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon onion soup mix
  • 1 teaspoon fresh rosemary
  • 1 pound jar applesauce
  • 1 cup cranberries
  • 1/4 cup dry vermouth

Directions
  1. Preheat oven to 350.
  2. Mix salt, pepper, onion soup mix and rosemary then put on both sides of pork chops.
  3. Brown chops in frying pan then put apple sauce and cranberries in casserole.
  4. Add chops and sauce to casserole then add vermouth and cover and bake 1-1/2 hours.
