Cheesy Fiesta Rice With Chicken Recipe
This slightly spice chicken casserole got my youngest son liking rice again.

Ingredients
  • 4 chicken breasts sliced and seasoned with cumin, salt, and pepper
  • 1 T butter
  • 1 cup rice
  • 2 cups water or chicken broth
  • 1/2 medium onion
  • 1/2 poblano pepper
  • 1 clove garlic
  • 1 T chili powder
  • 4 serrano peppers (or jalapenos)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup diced tomatoes
  • 1/4 cup fresh cillantro
  • crushed tortilla chips

Directions
  1. In large skillet brown chicken breast with cumin, salt and pepper...set aside for later
  2. Melt butter, cook rice, onion, garlic and poblano pepper until rice starts to open and vegies are translucent
  3. Add water or broth , chicken, serranos and chili powder, simmer until rice has nearly absorbed the liquid ( 20 min for white rice, 30-40 for brown rice)
  4. Add half the cheese, tomatoes, and cillantro
  5. You could just stop there, but if you want it to be really great put all this in a casserole dish, crumble broken tortilla chips on top and cover with the remaining cheese
  6. Bake at 350 until cheese on top gets slightly browned and bubbly, maybe 20 minutes
