How to make it

  • In large skillet brown chicken breast with cumin, salt and pepper...set aside for later
  • Melt butter, cook rice, onion, garlic and poblano pepper until rice starts to open and vegies are translucent
  • Add water or broth , chicken, serranos and chili powder, simmer until rice has nearly absorbed the liquid ( 20 min for white rice, 30-40 for brown rice)
  • Add half the cheese, tomatoes, and cillantro
  • You could just stop there, but if you want it to be really great put all this in a casserole dish, crumble broken tortilla chips on top and cover with the remaining cheese
  • Bake at 350 until cheese on top gets slightly browned and bubbly, maybe 20 minutes
