Faiths Healthy Chicken Noodle Soup

- 1/3 C. celery, chopped shopping list
- 1/3 C. onion, chopped shopping list
- 1/2 C. carrots, chopped shopping list
- 1 large boneless skinless chicken breast approx. 10 oz. cut into bite size pieces (may use leftover cooked chicken) shopping list
- 1/2 C. zucchini, chopped shopping list
- 32 oz. carton fat free chicken broth shopping list
- 1 C. water shopping list
- 1 tsp. dried parsley shopping list
- 1 bay leaf shopping list
- 1 tsp. minced garlic shopping list
- 1/8 tsp. celery seed shopping list
- splash of white wine shopping list
- egg noodles or rice shopping list
- salt/pepper to taste shopping list
How to make it
- Saute celery, onion, carrot, and chicken in a little olive oil over medium heat. about 6 min.'s
- Add broth, water, and zucchini and bring to a boil.
- Turn heat to low and add parsley, bay leaf, garlic, celery seed, and a generous grinding of the pepper mill. Cover and simmer approx. 20 min.'s.
- Meanwhile cook egg noodles (about 2 large handfuls) according to package directions and drain.
- Add wine to soup, taste and add salt if needed.
- Stir in noodles.
