Wahoos Blackened Fish Tacos Recipe
This recipe came from a restaurant in Corpus Christi Tx. (they've moved now). The chef did a demo at the Aquarium in 1998. Ingredients are different but together they are great!.

Ingredients
  • 4-5 tbl. butter mixed with minced garlic (melted)
  • 1 filet of redfish
  • 4 flour tortillas
  • 1/2 cup of monterey jack grated
  • 1/2 cuo cheddar cheese grated
  • 1/2 cup tartar sauce (your fav)
  • 1/2 cup thick picante (your fav)
  • 3/4 cup cole slaw
  • 1/2 cup sour cream
  • cajun spice (Chef Paul Prudhommes blackened redfish spice)

Directions
  1. Place garlic butter on a flat top on the grill at 400'
  2. coat fish filet with spice on both sides
  3. Cook til done turning 1 time only
  4. Heat tortillas
  5. Spread tartar on tortilla,
  6. add cheese,
  7. add fish,
  8. top with cole slaw,
  9. then picante,
  10. and sour cream.
  11. Makes 4 tacos.
  12. Great served with black beans and dirty rice.
