Ingredients
  • 2 tablespoons for soy sauce, going to be divided
  • 3 teaspoons of cornstarch, going to be divided
  • 1 pound boneless skinless chicken breasts, in one inch cubes
  • 1/2 cup pomegranate juice
  • 1 tablespoon chili garlic sauce (found in Asian section of the store)
  • 1 teaspoon grated orange peel
  • 1 tablespoon vegetable oil
  • 2 stalks of celery, cut into 1/4 slices
  • 1 small bell pepper, 1-inch long strips
  • 1 orange peeled and sectioned (or you can just juice it)
  • 1 1/2 cups of rice

Directions
  1. You might want to start making the rice depending on how long it will take.
  2. during the rice cooking; Stir 1 tablespoon soy sauce into 1 teaspoon cornstarch in medium bowl until smooth.
  3. Add chicken, stir about to coat all the pieces, cover and let set for 10 mins.
  4. Meanwhile, combine pomegranate juice, chili garlic sauce, 1 tablespoon soy sauce, 2 teaspoons cornstarch, and orange peel in a small bowl until well blended
  5. Heat oil in a large skillet (or a wok if you have one. it works great) over medium-high heat. Add-chicken and stir fry for 2 minutes
  6. Add celery and bell pepper and stir fry for 3 min, or until chicken is fully cooked
  7. Add the pomegranate mix and stir. Turn heat up to high. Bring it to a boil and then reduce heat to medium and simmer for 1 min.
  8. Add the orange slices and heat through. (or if you are like me and don't want to eat squishy oranges i would just add the squeezed orange juice to it)
  9. Serve with rice
