How to make it

  • You might want to start making the rice depending on how long it will take.
  • during the rice cooking; Stir 1 tablespoon soy sauce into 1 teaspoon cornstarch in medium bowl until smooth.
  • Add chicken, stir about to coat all the pieces, cover and let set for 10 mins.
  • Meanwhile, combine pomegranate juice, chili garlic sauce, 1 tablespoon soy sauce, 2 teaspoons cornstarch, and orange peel in a small bowl until well blended
  • Heat oil in a large skillet (or a wok if you have one. it works great) over medium-high heat. Add-chicken and stir fry for 2 minutes
  • Add celery and bell pepper and stir fry for 3 min, or until chicken is fully cooked
  • Add the pomegranate mix and stir. Turn heat up to high. Bring it to a boil and then reduce heat to medium and simmer for 1 min.
  • Add the orange slices and heat through. (or if you are like me and don't want to eat squishy oranges i would just add the squeezed orange juice to it)
  • Serve with rice
