Pomegranate-orange chicken

- 2 tablespoons for soy sauce, going to be divided shopping list
- 3 teaspoons of cornstarch, going to be divided shopping list
- 1 pound boneless skinless chicken breasts, in one inch cubes shopping list
- 1/2 cup pomegranate juice shopping list
- 1 tablespoon chili garlic sauce (found in Asian section of the store) shopping list
- 1 teaspoon grated orange peel shopping list
- 1 tablespoon vegetable oil shopping list
- 2 stalks of celery, cut into 1/4 slices shopping list
- 1 small bell pepper, 1-inch long strips shopping list
- 1 orange peeled and sectioned (or you can just juice it) shopping list
- 1 1/2 cups of rice shopping list
How to make it
- You might want to start making the rice depending on how long it will take.
- during the rice cooking; Stir 1 tablespoon soy sauce into 1 teaspoon cornstarch in medium bowl until smooth.
- Add chicken, stir about to coat all the pieces, cover and let set for 10 mins.
- Meanwhile, combine pomegranate juice, chili garlic sauce, 1 tablespoon soy sauce, 2 teaspoons cornstarch, and orange peel in a small bowl until well blended
- Heat oil in a large skillet (or a wok if you have one. it works great) over medium-high heat. Add-chicken and stir fry for 2 minutes
- Add celery and bell pepper and stir fry for 3 min, or until chicken is fully cooked
- Add the pomegranate mix and stir. Turn heat up to high. Bring it to a boil and then reduce heat to medium and simmer for 1 min.
- Add the orange slices and heat through. (or if you are like me and don't want to eat squishy oranges i would just add the squeezed orange juice to it)
- Serve with rice
