Ingredients
  • 1 (1pound) Eggplant,peeled
  • 2 Onions,chopped
  • 2 Green Peppers,chopped
  • 1/2 Cup Parsley,fresh,snipped
  • 3 Garlic Cloves,minced
  • 1-1/2 teaspoons Salt
  • 1-1/2 teaspoons Dried Basil,crushed
  • 1/2 teaspoon Ground Nutmeg
  • 1/2 teaspoon Pepper
  • 1/2 Cup Butter
  • 2 Pounds Zucchini,sliced
  • 1 Pound Fresh Mushrooms,sliced
  • 4 Large Carrots,chopped(about 2 cups)
  • 2 Cups Water
  • 1 (28oz) Can Tomatoes,cut up
  • 1 (12oz) Can Tomato Paste

Directions
  1. In a large kettle,cook cubed eggplant,onion,pepper,parsley,and seasonings in butter for about 10 minutes.
  2. Add zucchini,mushrooms, and carrots.
  3. Combine water, undrained tomatoes, and tomato paste.
  4. Add to vegetables,and simmer,uncovered,for about 20 minutes.
  5. Ladle in clean,hot pint canning jars,cap,process.
