- 1 (1pound) eggplant,peeled shopping list
- 2 onions,chopped shopping list
- 2 green peppers,chopped shopping list
- 1/2 Cup parsley,fresh,snipped shopping list
- 3 garlic cloves,minced shopping list
- 1-1/2 teaspoons salt shopping list
- 1-1/2 teaspoons dried basil,crushed shopping list
- 1/2 teaspoon ground nutmeg shopping list
- 1/2 teaspoon Pepper shopping list
- 1/2 Cup butter shopping list
- 2 Pounds zucchini,sliced shopping list
- 1 Pound fresh mushrooms,sliced shopping list
- 4 Large carrots,chopped(about 2 cups) shopping list
- 2 Cups water shopping list
- 1 (28oz) can tomatoes,cut up shopping list
- 1 (12oz) Can tomato paste shopping list
How to make it
- In a large kettle,cook cubed eggplant,onion,pepper,parsley,and seasonings in butter for about 10 minutes.
- Add zucchini,mushrooms, and carrots.
- Combine water, undrained tomatoes, and tomato paste.
- Add to vegetables,and simmer,uncovered,for about 20 minutes.
- Ladle in clean,hot pint canning jars,cap,process.
