How to make it

  • In a large kettle,cook cubed eggplant,onion,pepper,parsley,and seasonings in butter for about 10 minutes.
  • Add zucchini,mushrooms, and carrots.
  • Combine water, undrained tomatoes, and tomato paste.
  • Add to vegetables,and simmer,uncovered,for about 20 minutes.
  • Ladle in clean,hot pint canning jars,cap,process.
