How to make it

  • Peel skin off the tomatoes and and cut them up into chucks, place in skillet
  • finely chop garlic (after smashing) and add to tomatoes
  • throw in about a palm of cracked pepper corns
  • a dash or two of salt (taste later and titrate)
  • strip leaves from oregano and throw in
  • pour enough olive oil in till it looks like its going to make a good sauce (about half a cup or so, stop whining, olive oil is good for you!)
  • stir it all up and place the lid on it, heat to a nice gentle boil for about 5 minutes or so
  • get your potato masher and when the tomatoes look like they'll mash real good, got at it. mash them up till the sauce looks real inviting
  • taste it, as salt if you need to
  • let it simmer covered for about 10 minutes or so, letting all the flavors get to know one another
  • cook the pasta while your sauce is maturing
  • just before your pasta is al dente, add the shrimp to the sauce and stir it up. watch it, be sure not to over cook the shrimp
  • once done, serve over pasta and sprinkle with fresh grated parmesan cheese. goes great with crusty bread.
