Shrimp N Sauce Recipe
Great sauce for shrimp or scallops to go over pasta. pretty quick, too. I never measure when cooking, so you gotta eye it.

Ingredients
  • 5-6 Fresh tomatoes (on the vine or stand)
  • 4-5 cloves fresh garlic
  • 1 stems fresh oregano
  • Fresh ground black pepper
  • salt
  • olive oil (virgin)
  • half a pound or so peeled medium shrimp (or whatever you like)
  • pasta (fettuccine, farfalle, linguine)
  • iron skillet
  • Parmesan cheese

Directions
  1. Peel skin off the tomatoes and and cut them up into chucks, place in skillet
  2. finely chop garlic (after smashing) and add to tomatoes
  3. throw in about a palm of cracked pepper corns
  4. a dash or two of salt (taste later and titrate)
  5. strip leaves from oregano and throw in
  6. pour enough olive oil in till it looks like its going to make a good sauce (about half a cup or so, stop whining, olive oil is good for you!)
  7. stir it all up and place the lid on it, heat to a nice gentle boil for about 5 minutes or so
  8. get your potato masher and when the tomatoes look like they'll mash real good, got at it. mash them up till the sauce looks real inviting
  9. taste it, as salt if you need to
  10. let it simmer covered for about 10 minutes or so, letting all the flavors get to know one another
  11. cook the pasta while your sauce is maturing
  12. just before your pasta is al dente, add the shrimp to the sauce and stir it up. watch it, be sure not to over cook the shrimp
  13. once done, serve over pasta and sprinkle with fresh grated parmesan cheese. goes great with crusty bread.
