LENTILS For Cheyvonne Recipe

Ingredients
  • 1-12 oz bag dried lentils
  • 2 stalks celery, diced
  • 2 med carrots, sliced
  • 2 med shallots, diced
  • 1/4 cup olive oil
  • 2 bay leaves
  • 1/4 tsp dried thyme
  • 3 cups chicken stock
  • -15 oz can died tomatoes with juice, or 1 large ripe tomato, diced with juice
  • salt & pepper to taste

Directions
  1. Saute' the veggies in the olive oil over medium heat until just tender.
  2. Add all other ingredients.
  3. Bring to a boil, then reduce heat to a simmer.
  4. Cook for 30 minutes or until lentils are tender.
  5. Serve with rice or couscous.
