LENTILS For Cheyvonne

- 1-12 oz bag dried lentils shopping list
- 2 stalks celery, diced shopping list
- 2 med carrots, sliced shopping list
- 2 med shallots, diced shopping list
- 1/4 cup olive oil shopping list
- 2 bay leaves shopping list
- 1/4 tsp dried thyme shopping list
- 3 cups chicken stock shopping list
- -15 oz can died tomatoes with juice, or 1 large ripe tomato, diced with juice shopping list
- salt & pepper to taste shopping list
How to make it
- Saute' the veggies in the olive oil over medium heat until just tender.
- Add all other ingredients.
- Bring to a boil, then reduce heat to a simmer.
- Cook for 30 minutes or until lentils are tender.
- Serve with rice or couscous.
