How to make it

  • slice the potatoes while still warm into 1/2cm slices.
  • Mix the mayonnaise with the oil, vinegar, chives and salt.
  • Add the potatoes and mix them together. Set aside and keep warm.
  • In a frying pan melt the butter and add the HP sauce, lemon juice and pepper.
  • Now add the scallops over a medium heat and roll them in the juices. 2-3 minutes on each side.
  • Add the chorizo and cook until warmed through. DO NOT leave it too long or it goes hard.
  • Spoon a helping of potato salad onto a plate and make a nest in the center.
  • Place the scallop and chorizo mixture in the middle.
  • Dust with paprika and serve with a coriander leaf on the top.
