Warm Potato Salad with Scallops Chorizo and HP Brown Sauce

- 300g potatoes, peeled and cooked shopping list
- 4 tablespoons mayonnaise shopping list
- 2 teaspoons olive oil shopping list
- 1 teaspoon balsamic vinegar shopping list
- 1 heaped teaspoon chopped chives/coriander shopping list
- pinch of salt shopping list
- 25g unsalted butter shopping list
- 2 tablespoons HP brown sauce shopping list
- 2 tablespoons fresh lemon juice shopping list
- freshly ground black pepper shopping list
- 2 king scallops shopping list
- 50g chorizo, diced into 1cm bits shopping list
- paprika shopping list
How to make it
- slice the potatoes while still warm into 1/2cm slices.
- Mix the mayonnaise with the oil, vinegar, chives and salt.
- Add the potatoes and mix them together. Set aside and keep warm.
- In a frying pan melt the butter and add the HP sauce, lemon juice and pepper.
- Now add the scallops over a medium heat and roll them in the juices. 2-3 minutes on each side.
- Add the chorizo and cook until warmed through. DO NOT leave it too long or it goes hard.
- Spoon a helping of potato salad onto a plate and make a nest in the center.
- Place the scallop and chorizo mixture in the middle.
- Dust with paprika and serve with a coriander leaf on the top.
