Zesty Onion Couscous Recipe
This goes well with fish, chicken, lamb, pork, beef.. just about anything!

Ingredients
  • 1 Tablespoon Butter or Margarine
  • 1/4 Cup Green Onions, minced
  • 1 Cup Couscous, uncooked
  • 1/8 Teaspoon Cayenne Pepper
  • 1/2 Cup Carrots, thinly sliced
  • 14 Ounces Beef (chicken or Vegetable Broth)

Directions
  1. In a 2-3qt. saucepan (with lid), saute carrots & onions in 1T butter or margarine, until tender. Pour in broth and add cayenne. Bring to a boil.
  2. Add couscous, stir to combine. Cover and remove from heat. Let stand 5 minutes, stir and serve. This recipe is adapted from Pillsbury.
