Ingredients

1 c soft shortening

2 c sugar

2 eggs unbeaten

4tbs orange zest

3 tbs gorange apricot juice <gerber for nutrition or some baby food type>

1 tsp nutmeg

1 tsp salt

4 tsp baking powder

2 c flour

2 c infant cereal

Directions

preheat oven to 375

cream shortening and sugar together

add eggs and beat well

stir in orange zest

sift together nutmeg salt baking powder and four

add alternately with juice

mix in cereal untill well blended

drop dough from teaspoon onto greased cookie sheet

bake 12- 15 min

makes about 5 doz cookies

This is a good recipe to use up all those boxes of infant cereal that your baby didn't eat! I used 1/2c shortening and 1/2c applesauce and the juice squeezed from two small oranges. I think that next time, I'll reduce the sugar too.
