How to make it

  • Shred the dried beef. Do not use the beef in a jar as it is usually too salty. Heat a heavy skillet until it is very hot. Put the butter in the pan, when the butter is sizzling,add the beef. Let cook over high heat until it begins to curl and is crispy and slightly browned. Sprinkle flour over the beef. Stir with a wooden spoon keeping it moving so it won't burn, but let flour get a little brown. Then gradually add the milk, stirring all the time. Let it come to a boil and bubble for at least 4 minutes. This sets the flavor. If sauce seems too thick, add more milk. It should be like thick heavy cream. Taste to see if you would want more pepper (no salt needed). Serves 4.

    This takes me back to my childhood. We soaked the meat in water to remove the salt. Served over buttered toast or mashed potatoes. Sometimes for a change we added boneless canned pink salmon.
