Open Face Bean Sandwich With Walnuts Recipe
Believe it or not ...this is a delicious sandwich . I like it on seven grain bread, with lemon ice tea, and old-fashioned sweet pickles.

Ingredients
  • 1 cup pinto beans, leftover homecooked or canned
  • 1/4 cup walnuts, chopped
  • 1/4 cup celery, chopped
  • 2 tbsp. a good pickle relish
  • 2 tbsp. onions, chopped
  • 2 tbsp. ketchup
  • 8 slices hearty bread

Directions
  1. Mash pinto beans with a fork
  2. Stir in chopped walnuts, chopped celery,
  3. a good pickle relish, chopped onion, and ketchup.
  4. Serve on slices of your favorite hearty whole grain bread.

Yankee version: My mother used to make us baked bean sandwiches with ketchup. So good! You know, I bet this recipe would be good with baked beans as well as pintos. . .hmmm.
