The easiest and best mock tuna salad I have ever tried. I would like to give credit to Lindy Loo on whose blog I found this recipe. Also, if you omit the mayo, you could use it in Tuna Noodle Casserole. Best wishes!

Ingredients
  • * 1(15 oz.) can chick-peas, drained (or 1.5 c. cooked)
  • * 1/4 cup vegan mayonnaise or regular mayo if you are vegetarian
  • * 1/3 cup minced celery
  • * 2.5 T. minced dill pickle (about 1 pickle-slice, give or take)
  • * 1/2 T. nutritional yeast
  • * 1 green onion, chopped
  • * 1 t. soy sauce
  • * 1/2 t. kelp powder or Nori flakes pulverized into a powdery substance. (from what I understand this can be omitted but then I don't know where the "fishy" flavor would come from)
  • * pepper, to taste

Directions
  1. Mash the chick peas to the consistency that seems right to you
  2. Add all of the other ingredients
  3. Mix and enjoy on tater chips, crackers, bread, or vegetables.
