Mexican Pot Roast In A Bag Recipe
MEXICAN POT ROAST IN A BAG This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ackerman Estate in Dallas, Texas in 1989.

Ingredients
  • 1 package bag and season for pot roast
  • 3 pounds boneless chuck roast
  • 15 ounce can black beans drained and rinsed
  • 11 ounce can whole kernel corn drained
  • 4-1/2 ounce can chopped green chilies
  • 1 cup hot chunky salsa

Directions
  1. Preheat oven to 350 then arrange roasting bag in rectangular baking pan.
  2. Trim excess fat from meat then place in bag.
  3. Combine seasoning blend and remaining ingredients then pour over meat.
  4. Close bag loosely with nylon tie and cut 4 small holes in top of bag to allow steam to escape.
  5. Cook 1 hour and fifteen minutes then allow to stand 5 minutes before slicing.
