After Dinner Mint Brownies

- 6 ounces unsweetened chocolate shopping list
- 2-3/4 cup granulated sugar shopping list
- 1 cup dark corn syrup shopping list
- 1 teaspoon vanilla shopping list
- 1 cup butter softened shopping list
- 2 cups all purpose flour shopping list
- 1/4 teaspoon salt shopping list
- 6 eggs shopping list
- 1-1/2 cups walnuts coarsely chopped shopping list
- mint frosting: shopping list
- 2 cups confectioners' sugar shopping list
- 2 tablespoons milk shopping list
- 6 tablespoons butter softened shopping list
- 1/4 teaspoon peppermint extract shopping list
- green food coloring shopping list
- chocolate glaze: shopping list
- 3 ounces unsweetened chocolate shopping list
- 1 ounce semisweet chocolate shopping list
- 4 tablespoons butter shopping list
- 2 teaspoons dark corn syrup shopping list
How to make it
- Preheat oven to 350 then grease a jelly roll pan.
- In heavy saucepan heat chocolate over low heat until melted and smooth stirring frequently.
- In large bowl with mixer at low speed beat sugar, syrup, vanilla and butter just until blended.
- Increase speed to high then beat until light and fluffy.
- Reduce speed to low then add flour, salt and eggs and beat until well mixed.
- Increase speed to high and beat 2 minutes then at low speed blend in melted chocolate.
- Stir in walnuts with wooden spoon the spread batter evenly in pan and bake 40 minutes.
- Cool brownies in pan on wire rack.
- Beat confectioners' sugar, milk, peppermint extract and 6 tablespoons butter until smooth.
- Stir in enough green food coloring to tint then evenly spread frosting over cooled brownies.
- Refrigerate while preparing glaze.
- Heat glaze ingredients in heavy saucepan over low heat until chocolate melts and is smooth.
- Stir frequently then remove from heat and stir frequently until glaze cools slightly.
- Spread over frosting to completely cover top then refrigerate until glaze is set about 1 hour.
