Chocolate Mini Cupcakes with Penuche Frosting

- 1 1/2 cups flour shopping list
- 1/2 cup cocoa powder shopping list
- 2 tsp instant coffee powder shopping list
- 1 cup sugar shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1/4 tsp salt shopping list
- 3/4 cup milk shopping list
- 1/2 cup vegetable oil shopping list
- 1 tsp vanilla extract shopping list
- 1/2 cup butter shopping list
- 1 cups brown sugar shopping list
- 1/4 cup milk shopping list
- 2 cups powdered sugar shopping list
How to make it
- Melt butter in saucepan over medium heat.
- Add brown sugar and stir constantly until reaching a boil
- Reduce heat to low and continue stirring about 2 minutes
- Add milk to mixture and return to boil, continuing to stir, then remove from heat
- Put frosting mixture into fridge for 30 minutes while making cupcakes
- Preheat oven to 350 degrees
- Mix together flour, cocoa powder, coffee powder, sugar, baking powder, baking soda and salt
- Mix together milk, vegetable oil, and vanilla extract
- Add wet ingredients to dry and stir until just mixed.
- Spoon into 48 lined mini muffin cups and bake 10 minutes
- Remove cupcakes from pan and allow to cool before frosting
- Remove frosting mixture from refrigerator and slowly beat in powdered sugar. Add 1 tsp milk if consistency becomes thicker than desired
