How to make it

  • Melt butter in saucepan over medium heat.
  • Add brown sugar and stir constantly until reaching a boil
  • Reduce heat to low and continue stirring about 2 minutes
  • Add milk to mixture and return to boil, continuing to stir, then remove from heat
  • Put frosting mixture into fridge for 30 minutes while making cupcakes
  • Preheat oven to 350 degrees
  • Mix together flour, cocoa powder, coffee powder, sugar, baking powder, baking soda and salt
  • Mix together milk, vegetable oil, and vanilla extract
  • Add wet ingredients to dry and stir until just mixed.
  • Spoon into 48 lined mini muffin cups and bake 10 minutes
  • Remove cupcakes from pan and allow to cool before frosting
  • Remove frosting mixture from refrigerator and slowly beat in powdered sugar. Add 1 tsp milk if consistency becomes thicker than desired
