Mexican Minestrone Recipe
Another easy chili type soup that taste fabulous and makes you glad you have leftovers...if you do! Also great with cornbread or tortilla chips.

Ingredients
  • ***All cans are the regular size
  • 1 to 2 lbs. of hamburger
  • 1 small onion, chopped
  • 3 cans of Minestrone (Campbell’s) PLUS 1-1/2 cans of water
  • OR
  • 1 can of Progresso Minestrone and NO water added
  • 1 can of corn, undrained
  • 1 can of chopped Rotel (with chili powder if you can find it)
  • 1 can ranch style beans (feel free to use the bigger can)

Directions
  1. Brown hamburger with chopped onion
  2. Drain fat and put hamburger and onion mixture in large cooking pan
  3. Add remaining ingredients and simmer on low, covered, stir occasionally
  4. OR put in crock pot and cook on High for 4 hours or Low for 6 to 8 hours
  5. You can also easily double this recipe
