Rich Lemon Muffins Recipe
RICH LEMON MUFFINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Haddox Estate in Austin, Texas in 1992.

Ingredients
  • 2 cups unsifted all purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 stick butter
  • 1/2 cup fresh lemon juice
  • 2 large eggs
  • 2 tablespoons finely grated lemon rind

Directions
  1. Preheat oven to 400 then line 12 medium cups with paper lines.
  2. Combine flour, sugar, baking powder and salt then blend well.
  3. Melt butter then remove from heat and stir in lemon juice, eggs and lemon rind.
  4. Stir egg mixture into dry ingredients and blend until well moistened.
  5. Spoon into muffin cups and sprinkle top of batter with 2 tablespoons sugar.
  6. Bake until lightly browned about 20 minutes.
